Try the pilao (rice pilaf) set meal, which comes with yogurt, which you can dole onto your rice to give it a creamy texture. The atmosphere is pleasant, with walls decorated in colorful tiles and Uighur musicians that play traditional instruments. If you order the fruit plate, remember to eat the watermelon first, before the grapes and the Hami melon — it’s an Uighur taboo to do it in reverse!

4 - Lao Chayuan Jiudian Restaurant :
When the locals treat themselves, they make for this eatery, an institution since 1989. Service can be frosty, and the pseudo-Arabian decor is tacky. Let the food take center stage. All dishes are well presented, often with fancy garnishes, something you don’t see a lot of in southern Xinjiang. For starters, try ban san si, a finely sliced salad of capsicum, onion, carrot, cucumber, and noodles; or try the old favorite, roast peanuts. Recommended main courses are a tender beef stir-fry (chaokao rou) and the dry-fried spring chicken (ganbian tongziji). The local delicacy is field mushrooms steamed with bok choy, ginger, and garlic (bachu mogu), although their slippery texture won’t be to everyone’s taste.

Yarbag Polohanisi Restaurant:
Kashgar’s best-known restaurant has been packed with locals for the several years, taking shade under a willow tree. Alas, old willow trees are not in the picture for the new Kashgar. City planners have arranged a date with the bulldozer, leaving the new restaurant with the unwieldy name “The pilaf and noodle restaurant that was once next to the no. 9 Primary School.” The willow tree remains the logo, and the larger premises will continue to serve savory pilaf and beef ball noodles (wanzimian).
